The genuine and forged letters of Ignatius of Antioch? How can we prove the genuine?

I've heard James White in his debates mention the "genuine" letters of Ignatius (implying that there are forged ones) and I've heard several non-Trinitarians argue that the letters of Ignatius of Antioch are forged or untrustworthy (clearly with a bias). I've also seen myself (with help from a Trinitarian brother) a big difference between the same portions of his letters on the deity of Christ. So how would you respond to that argument? How can we prove which letters are genuine and which ones are false? And I would also like to know more about the "canon" of the Ignatius letters :)
 
The first seven or so letters dealing with "the bishop" and the "eucharist" are geniuine. The last seven or so are probably spurious. If you wanted to prove the deity of Christ from Ignatius's earlier letters, he associates the wine of communion with the medicine of immortality.
