I'm looking into typesetting software for use with publishing school papers etc. I was wanting to see if anyone had ventured into using some form of LaTeX and if they had any success with formatting Greek/Hebrew/Latin with it?

When using editors like word I'm far too tempted to play around with my formatting while I'm composing my material. Using something like LaTeX seperates the composition from the layout allowing me to focus on authoring content only. Then you apply a template and violla a nice document. These types of engines also tend to handle longer documents a lot better than MS Word traditionally has. Though when looking through several LaTeX engines I'm still seeing what appears to be a lot of issues with fully supporting unicode.

Just wanting to see what other people are doing.

Well, MS Word is not a typesetting program. For good typesetting, which you may not need for papers, but for publishing, go with the main ones, all from Adobe, Pagemaker, or Framemaker for long documents, or I like InDesign for things that are not index intensive.
