Are there any moral or practical implications of the Old Covenant Feasts for New Covenant believers?
If not, what do we learn from them?
Are there any good books on the subject?

Obviously, for ecclesiastical celebrations, these are forbidden. However, they have much practical use for people's personal lives, and also reflect the joy of redemption among God's people.
Furthermore, they seem to find their New Covenant replacement in the Lord's Table, as well as in every day eating and drinking to the glory of God.
Rushdoony's Institutes of Biblical Law deal with the festivals of the Old Covenant.

Cheers, | I'd point you to Patrick Fairbairn's Typology of Scripture, which I just got in the mail today. 
He deals with the feasts in about a 30-page section toward the end of the book - glancing over it, and knowing Fairbairn to be solid, I'd say this book might be what you're looking for.
