Well after reading and having a good understanding of
Louis Berkoff Systematic Theology, Calvin's institutes and the Westminster confession (study guide from G.I. Williamson)...
how do I go deeper? what should I be reading and looking into next d'you think?

It might be a good idea to see some of the sources from which those men drew, or to see things laid out in more detail. Therefore I would recommend:
Francis Turretin, Institutes of Elenctic Theology
Thomas Aquinas, Summa Theologica
Augustine, Enchiridion
That should keep you busy for a while.

Aquinas is the glory of medieval Christendom. Anyway, whether directly or indirectly, he did exercise a massive influence on subsequent doctrinal discussions.

In addition to some of the excellent suggestions above (e.g., slowly digesting Turretin), it might be good to add some more topical, or -- even more so -- exegetical works to your studies. Some good commentaries on scripture would be great. Or perhaps, for a real treat, you could try Thomas Goodwin's sermons on Ephesians. These will be a theology course all in themselves.
