Well, that's a tough one because of the precise parameters. Of Matthew Henry, in a 3-vol set, the NT would be one volume, so I would get that. If I could only have one book on the Gospels and it had to deal with all four, then hands down it would be The Life and Times of Jesus the Messiah by Alfred Edersheim. And as far as a one-volume commentary on all the Pauline epistles, you'll have to wait for Andrew or Lane to see your post!
